Hickson House Distilling Co, RE- Bar built on waste, Icons of Whisky Australia 2021 announced, Tales of the Cocktail 2021 dates and more in this week’s industry news.
Hickson House Distilling Co
The duo behind The Barber Shop and The Duke of Clarence, Mikey Enright and Julian Train, joined by distiller Tim Stones (ex-Manly Spirits) are set to open Hickson House Distilling Co in June 2021.
Located at The Rocks, the venue will take over the former Saatchi & Saatchi garage and will feature a distillery, bar and kitchen with a mezzanine lounge sitting above the bar, serving bespoke cocktails alongside a botanical-inspired menu.
Hickson House Distilling Co will create gins, aperitifs, whiskies and specialist spirits crafted with locally-sourced ingredients, such as native botanicals from The Loch farm at Berrima in New South Wales’ Southern Highlands.
RE- Bar Built on Waste to Open in 2021
RE-, the world’s first permanent no-waste bar, is set to open in the newly-restored South Eveleigh precinct in February. The venue is a collaboration between Matt Whiley (Scout) and Maurice Terzini (Icebergs Dining Room & Bar, CicciaBella). Their approach to waste is world-leading, with every facet of the bar focussed on sustainability including the look and feel of the venue.
A central bar and tables terrazzo style are made from Re-Plas recycled bottles and tupperware. The stairs and structural features are made from recycled plastic bags. Wood is sustainable, banquettes are clothed in pineapple-leaf fibre and elegant light fittings and wine coolers are made from mycelium.
Whiley will oversee a list of 8-10 changing signature cocktails. Built on diverted waste and leaning more twist than traditional, there will be a section of highballs and spritzes, as well as classics. All the drinks will showcase the kinds of innovative techniques he’s known for.

Icons of Whisky Australia 2021 Announced
The winners of Icons of Whisky Awards Australia 2021 were announced on Tuesday 2 February 2021. Unlike the previous year, the announcement was made through a virtual presentation hosted by Whisky Magazine through their social media channels. Lark Distillery was awarded Distillery of the Year. Tales of the Cocktail 2021
Tales of the Cocktail Foundation has announced the dates for Tales of the Cocktail 2021. It will return for the 19th year from September 20 – 23, 2021 in a digital format to prioritise the health and safety of its attendees and ensure a global audience has complimentary access to participate in its programming.
