The Here’s Looking at You Cocktail is part of the G7 Cocktails, a series of 7 unique cocktail recipes created by some of the best bartenders in Sydney specifically for our sister website Gourmantic’s 7th Birthday celebrations.
The cocktail is created by James Tristan Snelgrove of Button Bar in Sydney’s Surry Hills and takes its name from a personal story referencing an optometrist-patient relationship. Button Bar has been building a solid reputation with Australian gin and has recently hosted the inaugural Aus Gin Day and this cocktail gives a creative nod to the land of down under.
Here’s Looking at You is a savoury and umami take on the Martini using Hobart No 4 Gin, Cocchi Americano and a special ingredient: house-made Vegemite bitters. Hobart No 4 gin has a malty character and with Vegemite’s yeasty characteristics, it’s a perfect match that creates a bold and daring Martini that only gets stronger in flavour. The Australian native lemon myrtle – also a botanical in the gin – adds a hint of citrus while the pinch of salt highlights the Vegemite notes on the finish.
If you like the flavour of Vegemite and a Martini with big, bold, savoury notes, this cocktail is for you. When you try making it, serve it nicely chilled and don’t let it sit for long, the flavour profile changes markedly once the drink gets warm.
“Here’s Looking at You” Cocktail Recipe

Ingredients
- 50 ml Hobart No 4 gin
- 20 ml Cocchi Americano
- 2 dashes of house-made Vegemite Bitters
- Pinch of salt
Glassware: coupette
Garnish: lemon myrtle leaf
Method
In a cocktail shaker, add the gin, vermouth and bitters and throw the cocktail. Strain into a chilled coupette. Add a pinch of salt and garnish with smacked lemon myrtle leaf.
