The Limoncello Gimlet with Lemon Thyme uses the lemon-based liqueur in a spirit-forward cocktail and is the last drink in the ‘Summer of Limoncello Cocktails‘ series.

This adaptation of the classic Gimlet marries gin with the lemon liqueur, the brightness of lemon juice and the citrusy and herbaceous notes of lemon thyme.
Lemon thyme is another aromatic and perennial herb that is easy to grow in a cocktail garden. If you can’t get hold of lemon thyme, regular thyme can be substituted. Another variation would be to use Australian native thyme which adds a herbaceous and menthol-like flavour.
Limoncello Gimlet with Lemon Thyme Recipe

Ingredients
- 60ml gin
- 20ml limoncello
- 10ml lemon juice, freshly squeezed
- 2 lemon thyme sprigs
Glassware: cocktail glass
Garnish: lemon thyme sprig
Method
In a cocktail shaker, add gin, limoncello and freshly squeezed lemon juice. Add ice cubes and shake vigorously until chilled. Strain into a chilled cocktail glass. Garnish with a lemon thyme sprig.
