The Pho Spice Syrup can be used in drinks such as the Pho Cocktail and in an old fashioned. Here’s how to make it.
For the home bartender, flavoured syrups are simple to make. Our recipe fro Pho Spice Syrup calls for three type of spices, cardamom, cinnamon and star anise. The spices are dry toasted in order to release the aromas and flavour before being added to the simple syrup in a 1: 1 ratio. The spiced syrup is simmered in a pan then left to cool before being fine strained.
Pho Spice Syrup Recipe
Ingredients
- 1 cup white sugar
- 1 cup water
- 3 cardamom pods, bruised
- 1 cinnamon stick
- 1 star anise
Method
In a small pan, dry toast the spices for a minute or two until they release their aroma. In a small sauce pan, bring sugar, water and the toasted spices to the boil. Lower the heat and simmer gently for 5 minutes. Leave to cool for a couple of hours. Fine strain using a cheese cloth over a fine strainer and store in the fridge in a swing top glass bottle. It keeps fresh for approximately 2-3 weeks.
