While many tiki-based cocktails tend to be on the fruity and sweeter side, the Jamaica Float is a sour style of drink similar to a Daiquiri but with sparkling water added.
The drink is adapted from a recipe by Trader Vic, creator of the famous Mai Tai. The Jamaican Float is an aperitif style cocktail and makes a perfect sundowner to sip on during hot summer nights or those times when life seems like an endless summer. Served very chilled, it’s light and refreshing and you can easily follow it with another while entertaining friends in the garden.
The Jamaica Float is simple to make at home and while it asks for the rum to be “floating”, the technique simply involves holding a bar spoon full of the rum over the glass then gently dropping it onto the surface of the liquid.
Jamaica Float Cocktail Recipe
Based on a recipe by Trader Vic
Ingredients
- 30 ml dark Jamaican rum
- 15 ml lime juice
- 1 bar spoon of simple syrup
- 60 ml sparkling water
Glassware: cocktail glass
Garnish: maraschino cherry
Method
In a cocktail shaker 3/4 full of ice cubes, add sparkling water, lime juice and simple syrup. Give it a gentle shake and strain into a chilled cocktail glass. Float the rum on top and gently drop the maraschino cherry into the glass.
