The Cocomojito slushie combines coconut rum with lime juice, coconut cream and Vietnamese mint with a touch of lemongrass.
The ingredients of this frozen cocktail are blended together before ice is added incrementally and blended again until a slushie consistency is reached.
We used Vietnamese mint, also known as Vietnamese coriander which is popular in Vietnamese and South East Asian cuisine. The herb is easy to grow in pots or in an edible garden and can be easily propagated by taking cuttings. It has a peppery or hot minty taste, which is very pleasant and works well in the coconut and rum combination. The slushie is garnished with a spring of Vietnamese mint and a hollowed out lemongrass stalk.
