Pineapple sage is a herb well worth growing in the garden. The leaves have a distinct pineapple aroma when crushed yet the flavour is more herbaceous with a hint of sweetness. The flowers on the other hand have a nectar-like quality which can also be used to flavour beverages.
The aromatic herb lends itself well to cocktails such as Blue Hawaiian Slushie with Pineapple Sage and this variation on the Old Cuban, a cocktail I featured in my Festive Drinks radio segment on Real World Gardener 2RRR 88.5FM.
The Sage Cuban Cocktail Recipe

Ingredients
- 45 ml white rum
- 20 ml simple syrup
- 20 ml fresh lime juice
- 1-2 dashes of Angostura bitters
- 6 pineapple sage leaves
- splash of soda water to top
Glassware: coupette
Garnish: pineapple sage leaf and flower
Method
In a cocktail shaker, gently muddle the pineapple sage leaves with simple syrup and lime juice. Add white rum, bitters, ice and shake vigorously until cold. Double strain into a chilled coupette. Top with a splash of soda water and stir gently. Slap a pineapple sage leaf in the palm of your hand and float the leaf on the drink with a pineapple sage flower on top.
