Derrumbes Mezcal
Created by Esteban Morales (La Venenosa) and Sergio Mendoza (Tequila Don Fulano), Derrumbes Mezcal is an expression of terroir, various agave and production techniques that create a rich diversity of the ancient agave spirit.
Derrumbes Oaxaca 48% ABV
From the central valley of Oaxaca, Derrumbes Oaxaca is produced from Espadin which are cooked in an underground stone pit using black oak to impart subtle smoke. Wild yeast and pulque from agave Americana are used in fermentation which lasts for 72 hours before the liquid is twice-distilled in copper pot stills then rested in large glass bottles for up to three months. The flavour profile combines citrus and fruity agave notes with light smoke and subtle minerality.
Derrumbes San Luis Potosí 43.5% ABV
Derrumbes San Luis Potosí hails from the state of San Luis Potosí which enjoys a high altitude location in the Central Mexican Plateau. The mezcal is produced from the state’s wild agave Salmiana which grows abundantly but only yields a quarter as much spirit as blue agave. The agave are cooked in hornos, or above ground ovens which accounts to the lack of smoke character. Once cooked, the agave are crushed by a tahona before undergoing wild yeast fermentation then distilled twice in small copper pot stills. The flavour profile is sweet and complex with cooked agave, chalky notes and peppery spice.
Derrumbes Durango 45% ABV
Derrumbes Durango is made using traditional methods using the state’s wild agave Durangensis. The agave are cooked in underground ovens, crushed by tahona, naturally fermented and distilled in small copper pot stills. Agave Durangensis is known to yield a zingy, fruity mezcal with notes of citrus, tropical fruit along with light smokiness and a hint of minerality.
Derrumbes Zacatecas 47% ABV
Produced in the state of Zacatecas, a few miles from the Tequila Valley, Derrumbes Zacatecas is made from 100% blue agave, or Agave Tequilana Weber Azul, more commonly used in tequila production. The agave are cooked in underground in hornos, crushed by tahona, fermented with wild yeast and distilled in small copper pot stills. The flavour is that of a traditional mezcal with earthiness, gentle smoke, roasted agave and peppery spice.
