The ‘Summer of Limoncello Cocktails‘ series continues with the Limoncello and Rosemary Sonic for afternoon summer sipping.
You’ve probably heard of a Gin & Sonic, that is gin with half tonic water and half soda water – not Doctor Who’s Sonic Screwdriver. This drink takes the concept of mixing limoncello with tonic water and soda water and changes the ratio of tonic to soda water to 1:2 to maintain the brightness of the citrus. If you’re using a light tonic, you may wish to maintain the 1:1 ratio.
Rosemary, which is used to garnish the drink along with lemon peel is another perennial herb that is easy to grow in a cocktail garden. It adds aroma to the drink and complements the citrus notes of lemon.
Limoncello and Rosemary Sonic Recipe

Ingredients
- 30ml limoncello
- 30ml tonic water
- 60ml soda water
Glassware: tall glass
Garnish: lemon peel and rosemary sprig
Method
Build the drink in a tall glass by combining limoncello, tonic water and soda water. Add ice cubes and stir gently. Garnish with lemon peel and a rosemary sprig.
