The ‘Summer of Limoncello Cocktails‘ series continues with Limoncello Margarita, a bright and refreshing take on the classic cocktail.
Tequila and lime make an ideal pairing but in this instance, it is the lemon that takes centre stage in this riff on the classic cocktail.
This recipe for Limoncello Margarita uses the lemon-based liqueur in place of the usual orange liqueur or triple sec with the addition of freshly squeezed lemon juice. Blanco tequila is the spirit of choice as it maintains the brightness of the citrus although reposado tequila can also be used.
The usual salt rim is omitted as it doesn’t contribute much in this instance. The drink is garnished with a coriander sprig freshly-picked from the garden and floated over the drink.
