The Olive Herb Martini is our take on the Dirty Martini using the olive herb, an original Cocktails & Bars recipe to celebrate World Martini Day on June 19.
Olive Herb
The olive herb, santolina rosmarinifolia, also known as holy flax and wadi tops, looks more like rosemary and tastes of olives. It’s a hardy and woody plant that grows as a shrub up to 30-50cm high. The culinary herb has dark green needle-like leaves which have the flavour and aroma of olives.
The Olivia Martini
If you’re not keen on olives in your Martini, the olive herb is a great alternative. The Olivia Martini is a Cocktails & Bars original recipe that is a take on the dirty Martini. The recipe calls for a savoury, herbaceous or woody resinous style of gin, the likes of St George Terroir Gin or Patient Wolf Summer Thyme Gin and dry vermouth.
