Strawberry and Thyme Whisky Collins

The ‘Garden Collins Summer Series’, a series dedicated to the Tom Collins cocktail concludes with Strawberry and Thyme Whisky Collins using thyme from the garden.

Strawberry and Thyme Whisky Collins Recipe

Ingredients

50ml whisky
25ml lemon juice, freshly squeezed
15ml thyme syrup (click for recipe)
3 strawberries
soda water to top

Glassware: Collins glass
Garnish: thyme sprig

Method

In a cocktail shaker, muddle the strawberries with lemon juice and thyme syrup. Add whisky, ice cubes and shake hard until well chilled. Strain into a Collins glass filled with ice cubes. Garnish with a thyme sprig.
