For ‘The Good, The Bad and The Ugly’ cocktail, bartender and venue manager Mattia Arnaboldi of Button Bar in Sydney barrel ages white rum with plum pisco and chestnut liqueur for a delicious autumn flavour.
“The intriguing ingredients are reminiscent of autumn, a reminder of my home town Lake Como in Italy and of hiking in the mountains hunting for chestnuts added with a Caribbean touch,” Arnaboldi says.
The Good, The Bad and The Ugly cocktail is new on the menu at Button Bar, a pirate-themed small bar in Sydney’s Surry Hills with a focus on rum and gin cocktails. For the drink, he makes a plum Pisco, adds a 3 year old white rum, chestnut liqueur and barrel ages the mixture for 8 weeks in a 5 litre new American oak barrel washed with Oloroso sherry. The cocktail is then stirred down on ice with Tiki bitters and garnished with a lemon twist that cuts through the fruity notes. It’s perfectly balanced, super tasty, a spirit forward cocktail that embodies autumn in a glass.

Ingredients
- 30ml 3 year old white rum
- 15ml plum Pisco
- 10ml chestnut liqueur
- 3 dashes Tiki bitters
For the Plum Pisco
- 1 kilo of plums, chopped with skin and stones
- 1.4 L Pisco
Equipment: 5 litre new American oak barrel washed with Oloroso sherry
Glassware: old fashioned
Garnish: lemon twist, Clint Eastwood photo
Method
1. To make the Plum Pisco, infuse 1.4 litres of Pisco with 1 kilo of chopped plums, skin and stone included for 2 to 3 weeks in a big jar at room temperature. Strain into a bottle.
2. To barrel age, add 2.1 litres of 3 yo white rum, 1050 ml plum Pisco, 700ml chestnut liquor into a brand new American oak barrel washed with Oloroso sherry and leave for a minimum of 8 weeks.
3. To serve, stir down 55 ml of the barrel-aged cocktail in a mixing glass with ice and add Tiki bitter. Strain into an old fashioned glass with a big block of ice. Garnish with a lemon twist and a photo of Clint Eastwood on a mini peg.
