How to make the Tom Spice Non-Alcoholic Cocktail, a savoury shrub-based drink that is low in sugar and big on flavour.
With the increasing popularity of non-alcoholic cocktails, here’s a drink that is low on calories and sugar, and simply delicious to sip any time of the day.
The Tom Spice is an original (and the first) non-alcoholic cocktail recipe created by Cocktails & Bars. It combines Seedlip Spice non-alcoholic spirit with our very own original recipe for a tomato and native pepperberry shrub topped with a splash of soda water and a sprinkle of sea salt. The flavour profile is savoury with a heightened umami note from the shrub.
The tomato and native pepperberry shrub was originally created for Girt by Sea, our Australia Day cocktail for 2018. Unlike many shrubs that are made with apple cider vinegar, this one makes use of malt vinegar. You can read more about the shrub and follow the recipe here. The Australian native pepperberry adds a pungent spicy kick that works well with the allspice, cardamom and lemon notes in Seedlip Spice.
It’s worth noting that Tom Spice is the antithesis of a Bloody Mary. It’s gently spiced, highly sessionable and refreshing, and makes a great choice when you’re after a non-alcoholic and low sugar adult cocktail.
The drink is built in a coupette and served with a large block garnished with half a cherry tomato. It goes equally well in a short glass or a stemless wine glass with ice cubes and garnished with a skewered cherry tomato.
Tom Spice Non-Alcoholic Cocktail Recipe
Original recipe created by Cocktails & Bars
Ingredients
- 45 ml Seedlip Spice
- 60 ml tomato and native pepperberry shrub
- 100 ml soda water
- sprinkle of sea salt
Glassware: coupette
Garnish: halved cherry tomato on a large ice cube
Method
Build the drink in a chilled coupette. Top with soda water. Stir gently and add a large ice cube. Garnish with a halved cherry tomato.
