Named after the highly cerebrated Tommy’s Mexican restaurant and bar in San Francisco, Tommy’s Margarita was created by Julio Bermejo.
Tommy’s Margarita was created by Julio Bermejo in the late 1980’s. His family’s restaurant, Tommy’s Mexican Restaurant was recently the recipient of the Timeless U.S. Award in Tales of the Cocktail Spirited Awards 2021.
“We pre-dated the ‘Skinny Margarita'” by at least 20 years,” said Julio Bermejo in his acceptance speech that was broadcast live during the awards.
While a classic Margarita has tequila, orange liqueur, lime juice and at times a sweetener, Tommy’s Margarita substitutes orange liqueur with agave nectar and as such, has a relatively low glycaemic index.
“The Tommy’s Margarita was an evolutionary cocktail that came about from learning more about tequila, learning more about agave and wanting to deliver a Margarita that tasted of the tequila that our guests ordered,” he said. Described as “a true, global, modern classic” by Angus Winchester at the Awards, the cocktail has worldwide appeal and the use of agave nectar is harmonious with an agave spirit.
The shaken cocktail is served in a rocks glass with ice and an optional salt rim. We also used Tommy’s commemorative 50th anniversary glass that was kindly gifted to us by Julio Bermejo himself during his visit to Sydney in 2019.
Tommy’s Margarita Recipe
Ingredients
- 60ml tequila
- 30ml lime juice
- 15ml agave nectar
Glassware: rocks glass
Garnish: half salt rim (optional), lime wedge
Method
Prepare the glass by half rimming it with salt. In a cocktail shaker, add all the ingredients over ice and shake vigorously. Strain over ice in the rimmed glass and garnish with a lime wedge.
