Spicy, sweet and spirit-forward, the Allspice Manhattan is a riff on the Manhattan adding warm winter flavours to the classic cocktail.
Previously in our How-To/DIY section, we showed how to make Allspice Dram (or Pimento Dram), a sweet modifier with bold spice notes of clove, cinnamon, nutmeg and a warm peppery finish. Allspice Dram is a staple in Tiki cocktails and complements dark spirits by bringing warm winter flavours to the fore.
This recipe for Allspice Manhattan calls for a good measure of bourbon with Allspice Dram and sweet vermouth. The ratio of the later two depends on the spiciness of the Allspice dram so it pays to experiment. A few drops of bitters balance the sweetness and the result is a fine sipping cocktail that evokes Christmas in a glass.
The Allspice Manhattan is a stirred cocktail which is strained and served up in a chilled coupette or Martini glass with a Maraschino cherry. Alternatively, it can be served in an old fashioned glass with a large block of ice and an orange twist.

Allspice Manhattan Cocktail Recipe
Ingredients
- 60 ml bourbon
- 20 ml sweet vermouth
- 10 ml Allspice Dram
- 2 dashes of Angostura bitters
Glassware: coupette
Garnish: Maraschino cherry
Method
Add all ingredients in a mixing glass over ice and stir until chilled. Strain into a chilled coupette and garnish with a Maraschino cherry.
