Continuing their seafaring theme, The West Winds Gin have released the the Captain’s Cut gin, a new and permanent addition to the range.
Released on World Maritime Day, the new family member completes a quartet of Western Australian gins with four distinct flavour profiles: The Sabre (citrus), The Cutlass (savoury), The Broadside (salty) and Captain’s Cut (spicy).
Available in 500 ml bottles, Captain’s Cut is produced in Margaret River in Western Australia and comes in at a whopping 63% ABV chosen for the desired flavour profile rather than merely producing a high ABV gin. Twelve botanicals go into the making of the gin yet only two are revealed with native thyme and native sage as the leading botanicals.
Captain’s Cut Gin Tasting Notes

- Colour: clear, some viscosity in the glass
- Nose: very pleasant woody and herbaceous aromas of thyme and sage, the ones that you tend to associate with food, fleshy pink grapefruit,
- Palate: woody and resinous notes are dominant while the juniper takes a back seat, soft pine needles, a spicy component on palate with soft peppery notes, remarkably smooth for its ABV
- Finish: warming with good length, invites another sip
Comments: The Captain’s Cut Gin is a warm, winter style of gin that completes the flavour spectrum in the range. Although it is said to be a spicy gin, the spice comes from the peppery notes rather Christmas spices such as cinnamon and clove. Herbaceous and woody notes from the thyme and sage are more prominent and make the gin pleasant enough to sip on its own, if you like to sip your gin.
Tthe Captain’s Cut Gin comes recommended in a gin and tonic (Fevertree Indian Tonic) with blood orange. It goes equally well in a Dirty Martini, an Army and Navy, and makes a great The Last Word cocktail. The flavour of the gin gets lost in a classic 1:1:1 Negroni so try other ratios and experiment with different styles of vermouth.
