Party season is well and truly here so here’s an indulgent sparkling Cognac cocktail recipe, the Cognac Royale.
Cognac is a brandy that comes from the Cognac region of France, a spirit distilled from wine and aged in oak barrels. While it usually may be reserved for sipping, the spirit was popular in many pre-Prohibition cocktails such as the Mint Julep, the Sidecar and the French 75.
The brandy category which includes Cognac is in the midst of a revival with Cognac-based cocktails making their way back into cocktail lists. The spirit plays well with fruity flavours and in this recipe we’ve paired it with the orange notes of triple sec and topped it with champagne. You could use a plum wine instead of triple sec, and if you’re in a particularly celebratory mood, try Armagnac instead of Cognac.
The Cognac Royale cocktail is inspired by the Kir Royale and is a simple one to make. Simply add Cognac, triple sec and top with a dry Champagne or sparkling wine.
Cognac prices range in price and while you may sip on an XO, you can find good quality VSOP (Very Special Old Pale) Cognacs for mixing.

Cognac Royale Cocktail
Ingredients
- 30 ml Cognac VSOP
- 30 ml triple sec
- Brut Champagne to top
Glassware: coupette
Garnish: Maraschino cherry
Method
Into a chilled coupette, add the Cognac, triple sec then top with a dry Champagne. Stir gently with a bar spoon and garnish with a maraschino cherry.
