Daintree Sydney, a micro bar described as “a bar that cares” is opening with a green mission in The Rocks, Sydney.

Daintree Sydney is the brainchild of The Laidre group which opened The Keel in The Rocks late in 2021. They have joined with HalfCut, a not-for-profit organisation with the mission of protecting rainforests and rewilding over 50% of rainforests by donating half of all profits toward reforestation, as well as half its premises at the Sailor’s Home to the ‘Daintree Sydney’ venue. This bar is a dedicated charity with the intention of planting one million trees in the Australian rainforests.
Daintree Sydney can be found through a hidden entrance along the Cadman’s stairs which has been fitted with Australian natives such as Weeping Figs, Cordyline Australis, Hoya ferns and Gardenia adorning the entrance. A herb garden will have a variety of Australian natives in spring.
The venue is a mixture of heritage, recycled timbers and modern Australian art covered in native vines. The 11-panel board artwork by local artist Felix Saw will be coloured and finished for every 100,000 trees that are planted for the HalfCut cause.
As a micro-bar, it seats five tables at any one time and only takes bookings of 6 to 10 persons. Each Table has a QR code linking directly to donations and HalfCut merchandise that can be purchased to support their reforestation efforts in the Daintree.
The original sandstone fireplace holds local Australian Spirits and an upcycled wicker shelf features wine and beer sourced from NSW, hence minimising footprint. The only international brands are those with charitable and sustainable initiatives in mind.
The cocktail menu focuses on abundance and sustainability of Australian local produce. Seasonal native ingredients are at the heart of each cocktail, and where possible, the team will harvest their own herbs and leaves from the venue’s garden for the drinks. The opening cocktail menu features Gumnut Negroni, Quandong Daiquiri and Macadamia Colada with coconut washed white rum, macadamia butter and wattleseed.
Daintree Sydney opens in collaboration with HalfCut on World Rainforest Day on Wednesday, 22nd June from 8pm to the public with the intention will be to raise $50,000 over the first week for the charity.
