INNA Lounge, a luxe new late-night bar in the Sydney CBD, brings a new level of sophistication and nostalgia within The Republic Hotel in Sydney CBD.
Located on Level 2, the latest Sydney bar features dark and moody interiors with olive leather booths, low tables, and walls adorned with a rotating selection of modern Australian artwork , creating an intimate lounge-style atmosphere for up to 70 guests.
The oversize marble bar features around 120 agave spirits alongside a diverse range of over 400 spirits, and more than 200 wines – 60% sourced domestically throughout Australia.
The cocktail list draws inspiration from the art deco period of the 1930s and the products that emerged after World War I with drinks that reinvent familiar flavours from household staples, says Rusty (James Russell) Virtical Group Beverage Manager. Along with Uros Vukovic, Head Bartender (ex Baxter Inn, The Lobo, Nobu, Palmer & Co) and Nam Nguyen, Sommelier and Assistant Manager (ex Nobu, Hacienda, Hilton Hotel), the INNA Lounge team brings an exciting drinking experience to the Sydney bar scene.
At INNA Lounge, you’re drinking nostalgia.
The ‘Biscuit Tin’, an Arnott’s Biscuit peach cobbler is tropical, refreshing and moreish served with Arnott’s Scotch finger biscuit on top. Paying homage to the inventor of Milo, the ‘Mayne Meal’, blends tequila, mezcal, cola and the classic Milo with the Espresso Martini for a unique flavour experience. The Hindenburg Smash combines gin with Davidson plum and crème de violette in a refreshing, easy sipping cocktail.
Campbell’s Martini gives a nod to the classic the Campbell’s soup cans with fire roasted tomatoes in sous vide with fino sherry and Australian gin. It’s a perfect way to start the evening or enjoy with accompanying bar snacks by Chef Derek Bell such as Davidson plum cured kingfish on squid ink cracker, Moreton Bay bug roll and Mountain pepper beef skewers. For a luxe experience, there’s the table side sustainable caviar with potato crisps and crème fraiche.
The opening of INNA Lounge represents stage one of a facelift for the four-story Republic Hotel building which is undergoing a multi-million dollar renovation over the coming months.
INNA is open to the public Tuesday to Saturday from 4pm till late.
