Frog’s Hollow Saloon is set to open later this month bringing a bygone era to the Brisbane CBD.

Industry veterans Peter Hollands (formerly of The Gresham and Bacardi National Brand Ambassador), Nick Winter (previously at Bianca Restaurant, The Gresham, Mjolner Melbourne) and David Robinson (Hot Tamale, Snapper Rocks, Hanky Panky Lounge Darwin) have combined their experiences to bring fun back to whisky bars. Focusing on impeccable drinks and great atmosphere, they aim to bring to Brisbane the first, true, saloon style venue.
Frog’s Hollow is situated in what was Brisbane’s first red-light district by the same name. The venue with a 12-metre bar top is located within the John Reid & Nephews building at 26 Charlotte St. The heritage façade shows off the brick work and double sash windows of early Brisbane. Inside, the 50-year-old floorboards and exposed ceiling represent the passing of time.
They have assembled a strong team with Lily Morris, Thiago Silva, Magnus Moore, Martin McConnell and Liam Murphy (L-R in the photo back row).
“Brisbane, after a couple COVID years is looking for somewhere easy to gather with friends. Along with building a beautiful venue we wanted a space that was easy just to come on in, walk up to the bar and get a drink. We’ve got one of the strongest teams I’ve ever worked with, and we believe our offering is going to be unique to the Brisbane bar scene,” says Peter Hollands.
“Service should be f**king fun! I’m a huge believer in hiring based on personality and passion. We got extremely lucky that our team is also incredibly talented. Talent and personality make for an amazing service, and we can’t wait to share that with Brisbane!” says Nick Winter.
“Brisbane is a city I have spent a fair bit of time in over the last 6 years and to be involved in opening a Frogs with Peter and Nick, two guys I really respect their passion, skills and understanding of the industry, I couldn’t be more excited,” says David Robinson. “The space is beautiful and exactly what we were looking for. The team is incredible super talented hospitality professionals. Really exciting time ahead.”
Frog’s Hollow Saloon is set to open at 3pm on Thursday 24th March, 2022. The Brisbane bar will operate 7 days a week from 3pm to 1am.
