The ‘Summer of Limoncello Cocktails‘ series takes a southeast Asian detour in the Limoncello Mule with Lemongrass.
Lemongrass is an easy herb to grow in the home garden. If you’ve purchased some stalks, you can use the left over scraps from the bottom to grow another plant. It can be as simple as putting the ends in water by the windowsill, changing the water daily until roots form. They can then be planted in the garden and used in cocktails.
Limoncello Mule with Lemongrass Recipe

Ingredients
- 30ml vodka
- 45ml limoncello
- 1 lemongrass stalk, white part
- 60ml ginger beer to top
Glassware: short glass or copper mule mug
Garnish: hollowed out lemongrass stalk
Method
In a cocktail shaker, muddle the white part of the lemongrass stalk with limoncello. Add vodka, ice cubes and shake vigorously until well chilled. Double strain into a short glass or copper mule mug with fresh ice cubes. Top with ginger beer and gently stir. Garnish with a fresh, hollowed out lemongrass stalk as a straw or stirrer.
