After experiencing the Eau de Vie Martini Trolley service, and discussing the merits of the often underrated Gibson, bartender and bar manager Francesco Turrini suggested a savoury riff on the classic.
The Tequila Gibson is a martini variation that takes the specs of a classic dry Martini, or those of the Gibson and applies them to the agave spirit. A good measure of premium blanco or plata tequila is married with the nutty and dry notes of fino sherry with a couple of dashes of orange bitters to brighten the drink. The choice of tequila makes a difference and it pays to use the best blanco tequila on hand, preferably a single estate plata tequila.
The Tequila Gibson is a savoury cocktail that highlights the interplay of the vegetal and black pepper notes of the tequila along with the dryness of the fino sherry, complemented by the acidity of the pickled onions. Being a Gibson, the cocktail is served with the garnish on the side – five cocktail onions on a pick. Put all of them in and it overwhelms the drink. And the reason for having five? “One for each sip,” Francesco Turrini explains.
Tequila Gibson Cocktail Recipe
Cocktail recipe by Francesco Turrini of Eau de Vie Sydney
Ingredients
- 60 ml blanco tequila
- 10 ml fino sherry
- 2 dashes of orange bitters
Glassware: chilled coupette
Garnish: side serve of 5 pickled cocktail onions
Method
Stir all ingredients in a mixing glass over ice. Strain into a chilled coupette. Serve with a side of 5 pickled cocktail onions, one for each sip.
