Since it opened in 2011, Eau de Vie bar in Sydney has set the standard in providing a world class cocktail experience. The speakeasy has also been home to some of the best bartenders over the years with many moving into broader career choices.
Eau de Vie bar is located at the Kirketon Hotel in Darlinghurst. You won’t find street signage or directions to guide you. Just walk past the boutique hotel’s reception and you’ll escape into a world where drink magic happens.
You could count over 500 spirits on the back bar once you take a seat at the bar, along a communal table or cosy up at the back along comfortable banquettes. Occasionally, the Whisky Room may be open, an elegant dimly-lit lounge that houses personal bottle lockers.
Eau de Vie bar has built its reputation on delivering a total experience and this is what you get. The new drinks list is dedicated to the craft of the cocktail. Light and floral libations are listed under The Perfumer while The Stevedore brings all things citrus like Margaritas and Daiquiris. You’ll find restorative drinks under The Apothecary such as an evolved version of the Bloody Mary and a Cough Drop Blazer. These are just to name a few. Eau de Vie favourites or classics such as the Yuzu Mule are well worth revisiting.
