A transportative experience awaits at the newly-opened bar, Bridge Bon Appétit.
Perched on the mezzanine level above Restaurant Hubert‘s dining room, Bridge Bon Appétit is the third bar offering within the subterranean venue after Bar Pincer and Bar Normandy. Reminiscent of European bars in particular Parisian wine bars, the long and narrow space offers two parallel counters with high stools accentuated by the warm glow of lamps with fringed shades. Add the warm tones of dark timber and dim lighting, rows of vintage postcards perpendicular to rows of bottles of wine, and you could easily be transported to Paris.
Moody, inviting and intimate with a capacity of just over 40 persons, Bridge Bon Appétit has a dedicated food and drink offering that is separate from the other bars. The drinks list consists of an extensive wine collection with a focus on natural wines and those with minimal sulphur.
A succinct and eclectic cocktail list by Swillhouse Beverage Director, James Irvine borders on the experimental and changes regularly. On the opening menu is Caper, a wet style Martini with Four Pillars x Swillhouse Gin, Vodka and caper vermouth garnished with droplets of caper oil. Its savoury notes beg you to order Le Petit Roe Boats, a barquette with uni, avruga, salmon roe and cods roe.
Leyenda balances Mezcal smoke with pistachio, lime, Green Chartreuse, and egg white in a drink that is a harmony of green and herbaceous notes. There’s a Truffled Flip, made with a Cognac base, truffled duck egg and crème de cacao, and the beautifully balanced Fumé with smoked blueberry “wine”, figs, caramel and lemon in a Scotch whisky base.
Live tunes on Thursdays complete the setting adding the Hubert hallmark of never wanting to leave, be it on a date night or an intimate catch up with friends.
Transportative experiences are far and few in between. You could make this bar your pre-dinner destination or drop in for a night cap but Bridge Bon Appétit deserves to be a destination of its own.
