How to Use Shrubs in Cocktails
Shrubs can simply be used as a refreshing beverage with your choice of spirit such as gin, whisky, and mezcal topped with soda water. They are well suited to cocktails that have citrus with a sugar component. They can be substituted for the sweetener in a Daiquiri or the lime and soda in a Caipirinha. Use them in a sangria and in Bellini style drinks (pictured) topped with sparkling wine. For more complex cocktails, try them in an Old Fashioned with your favourite whisky and a dash of bitters.
Here are three cocktail recipes from Burrow Bar in Sydney using their house-made shrubs.
Gin Shrub Spritzer
Ingredients
- 30 ml gin
- 60 ml cherry and thyme shrub
- soda water
- ice cubes
Glassware: tall glass
Method
In a tall glass, build spirit and shrub over ice and top with soda water.
Strawberry and Pepper Shrub Bellini
Ingredients
- 10 ml of strawberry and pepper shrub
- dry sparkling wine
Glassware: champagne flute
Garnish: strawberry
Method
Pour the shrub into a champagne flute and top with a dry sparkling wine. Garnish with a strawberry.
Smoky Old Fashioned Shrub
Ingredients
- 45 ml blended Scotch whisky
- 15 ml peated Islay whisky
- 10 ml cherry and thyme shrub
- 1 dash of Old Fashion Bitters
Glassware: rocks glass
Garnish: orange peel and sprig of thyme
Method
In a mixing glass, stir ingredients over ice. Strain into a rocks glass with a large ice cube. Garnish with an orange peel and a sprig of thyme.
