Burrow Bar is a new small bar that opened in Sydney’s CBD. Finding it takes you on a treasure hunt.
Inside the long, intimate small bar bathed in warm, dim lighting, you’ll be right at home among sandstone walls, exposed timber ceilings, high bench tables, French provincial furniture and luxurious plush chairs.
Owners and long-time friends – Bryce, Jonny, Chau and Pie – whose combined extensive hospitality experience have created a welcoming and inviting venue that is a retreat from the clamour of Sydney’s CBD.
“The idea is to reflect that cocktails are fun yet complex and interesting drinks,” Bryce explains. Burrow Bar takes the approach to craft bartending seriously. Aside from spirits, most of the ingredients are seasonal and made in-house. Think syrups, sodas, grenadine, oleo saccharum and shrubs.
The cocktail menu goes through a 2-3 week cycle, with the new drinks listed under Handmade Cocktails which turn into Just Can’t Get Enough until they are eventually replaced.
The Burrow Shrub combines seasonal berries with herbs in vinegar. Drink it straight or add your choice of spirit, like the Cherry and Thyme Shrub with Ardbeg 10 topped with house-made soda. The drink makes you question why shrubs are not used more frequently in cocktail lists. Take the Long Hard Stare, a vibrant Mezcal old-fashioned with oleo saccharum ruby red citrus sugar. Or settle back with the rum-based Sour Captain Redbeard with house-made grenadine, egg white, lemon and lime juice.
A succinct wine list and nibbles menu takes a prose approach. The Baby Reuben Double on house-baked rye with house-corned brisket is not to be missed while the Picanha To Share, a whopping one kilo of rump cap with chimichurri and bread satisfies 3 or more.
Burrow Bar is a hidden treasure in the heart of Sydney’s CBD. Walk down De Mestre Place, a ramp from George Street opposite Wynyard and turn right until you spot a fire door with an ornate “B” surrounded by AstroTurf. The welcome and neighbourhood feel will make you forget the world outside.
