The Amaro Week cocktail series continues with the Outback Galah using an Australian Amaro.
From Adelaide Hills Distillery in Australia comes a small batch bitter orange aperitif inspired by the classic aperitifs of Italy. The Italian “Bitter Orange” is made from Australian native botanicals with Riverland orange, riberries, native thyme, sunrise lime and quandong. The flavour is predominantly bitter orange, fruity and citrus forward with a tart and herbal note. ⠀

The Outback Galah is a riff on the Jungle Bird using spirits from opposite ends of the country: Iridium Gold Rum from Mt Uncle Distillery in Cairns & The Italian Bitter Orange from the Adelaide Hills.

Outback Galah Cocktail Recipe
Ingredients
- 45 ml Iridium gold rum⠀
- 20 ml The Italian Bitter Orange⠀
- 15 ml lime juice⠀
- 15 ml simple syrup⠀
- 45 ml pineapple juice⠀
Glassware: short glass
Garnish: pineapple leaves⠀
Method
In a cocktail shaker, add all ingredients and shake with ice. Double strain into a short glass with ice cubes and garnish with pineapple leaves.
