When it comes to tequila bars in Sydney, they are few and far between. At the height of the Mexican food trend, new bars and restaurants emerged giving the agave spirit category a little helping hand. But as our fair city follows fickle trends, tequila fell out of favour.
Opened early in 2012, Tio’s Cerveceria is still going strong and spreading the agave love from Sydney’s Surry Hills. The vibrant bar stocks over 80 expressions of tequila and over 25 mezcal, raicilla, sotol, along with some rare finds.
The cocktail list features eleven drinks with one Especial, a refreshing and palate cleansing cocktail on tap with Herradura Plata tequila, watermelon juice, ginger, agave and citrus. You’ll find the popular Paloma and Tommy’s Margarita along with an elegant spritzer, South of the Border, with housemade vermouth (hibiscus, peppercorn, epazote, guajillo chilli and bayleaf) topped with Prosecco.
Tio’s has recently introduced other spirits aside from tequila to the cocktail list. Each uses common flavours found in Mexico while offering an attractive choice for the non-tequila inclined. Take the gin cocktail, Down the British, it combines cucumber, citrus, apple juice and chia seeds. The fruity rum-based Cuban Poison is served Tiki style, and the Oaxacan Sour is a take on the classic with the smokiness of mezcal and delicate notes of hibiscus syrup.
When it comes to bar food, Tio’s complimentary spiced popcorn is still served. If you’re still peckish, snack on Totopos y Salsa and Chicharones with chipotle mayo.
