Births and Deaths Bar brings to Wollongong a cocktail and gin bar with table service and a focus on sustainability and local ingredients.
The 60-seater bar is part-owned by Venue Manager Jared Huk along with Ben Abraham, Scott Miletto and Luke Symons who own Howlin’ Wolf Bar and Dagwood Bar + Kitchen in Wollongong. All venues are part of the Good Times Only Group including Scott Miletto’s Washington & Co, a whiskey saloon located in the town of Orange.
There’s nothing grim about Births and Deaths Bar. “The name comes from a twofold approach,” Jared Huk, Owner & Venue Manager explains. “Firstly we are situated at 2/74 Kembla St which is the old registry of births, deaths and marriages building. Secondly, it’s part of our sustainability ethos, the births and deaths of ingredients. We reuse waste from our drinks and food to make ingredients for other drinks.”
With sustainability and minimising waste at the heart of Births and Deaths Bar, a sorbet palate cleanser made from waste citrus husk is served to guests on arrival. Leftover skins from the beetroot relish and pumpkin puree are used to flavour a beetroot and pumpkin drink – both have proved popular with locals.
The table-service bar stocks over 60 gins predominantly from Australia along with a few international favourites. The “Gin and Mix” menu offers a selection of Australian gins paired with a choice of tonic water and garnishes such as the Snoop Dog, a mix of gin and mandarin juice. The gins are on rotation with the aim of showcasing a good range of Australian distilleries.
Seven Negronis feature on the cocktail menu including three barrel aged versions, one in a Shiraz barrel and another in a Muscat barrel for a period of 2 months. The bar also offers a range of craft beers with four rotating taps and a selection of fifteen rotating wines.
Births and Deaths Bar is open from 4pm to midnight Wednesday to Sunday.
