Drink among a collection of fossils set in an intimate Victorian-inspired lounge setting at the Evolve Spirits Bar in Hobart.
Located on Hobart’s wharf precinct within the MACq 01 Hotel building, the newly-opened Evolve Spirits Bar brings a sophisticated experience on the city’s historic waterfront. The venue by Tasmanian family-owned company Federal Group pays homage to the archaeological pursuits of the Victorian era where guests can get up close with 37 impressive fossils on display dating from 550 million years to 50,000 years including an 8ft tall Russian cave bear, Saltasaurus egg, Mammoth tusk and Triceratops nose horn.
The new bar is not a museum but houses over 400 rare and specialty spirits. Museum-piece Tasmanian and world spirits are on offer such as one-off bottlings of Glenfiddich, The Balvenie 40 yo, Glen Grant single malts from 1950, pre-phylloxera cognac dating over 100 years old, and often-inaccessible Tasmanian releases from Tim Duckett’s Heartwood whisky. Guests who purchase from the list of rare spirits are able to store the bottle securely in one of the bar’s 48 x Spirit Keeps.
Evolve Spirits Bar is led by award-winning bartender Dan Gregory who brings his extensive experience from highly acclaimed bars such as The Black Pearl in Melbourne and The Gresham Bar in Brisbane. His numerous accolades include winning Bartender Magazine’s Bartender of the Year in 2017 as well as the International Angostura Global Cocktail competition in 2017.
The drinks focus at Evolve Spirits Bar is on stirred and built cocktails that feature seasonal produce, fermentation and biologically-aged drinks. A smaller selection of wines, beers beers, ciders and food accompany the spirits offering.
What do fossils and spirits have in common? The Evolve concept is explained as follows. “Just as palaeontologists have captured our imagination with incredible beasts from centuries past, so too have the world’s master distillers by hand-crafting the finest spirits through alchemy of earth’s elements.”
