Of all the pandan cocktails in this series, the Coco Pandan Cocktail is the most versatile. Tall, refreshing and sessionable particularly on hot days, it plays well with several spirits that you could consider our recipe a template.
Rum is good match with the pandan syrup, dry gin highlights the herbaceous notes while blanco tequila amplifies the grassy character and vodka remains a neutral choice. Either lime or lemon juice can be used depending on what’s in season. For this recipe, we used a combination of both to balance the acidity.
The Coco Pandan Cocktail can be served as a tall drink over ice or in a tumbler with a large block of ice.
Coco Pandan Cocktail Recipe

Ingredients
- 50 ml dry gin / blanco tequila / rum / vodka
- 25 ml pandan syrup
- 10 ml lemon juice
- 10 ml lime juice
- 30 ml coconut water
Glassware: highball or old fashioned
Garnish: pandan leaf
Method
In a cocktail shaker, add your spirit of choice (be it gin, vodka, rum or tequila), pandan syrup, freshly squeezed lemon and lime juice over ice and shake hard until cold and the outside of the tin has frosted. Strain into a chilled highball glass over ice cubes or a large block of ice in an old fashioned glass. Top with 30 ml of coconut water and give it a gentle stir. Garnish with a pandan leaf.
