The popularity of speakeasy bars with obscure locations may be waning but once you find the new Easy Eight Bar and Diner, you’ll know that you’ve hit the trifecta.
Set in a secluded location in the laneway space near The Baxter Inn and The Barber Shop, Easy Eight will capture you with its lived-in look and welcoming vibe. Dimly-lit, the venue has retro style diner booths, tall tables near the entrance and seating at the bar. Black and white photographs of music artists and old record covers give a nod to the owners’ other venue, Mojo Record Bar.
The central bar seats ten persons and if you look closely, you’ll spot Fernet and Coke on tap.
Unlike its neighbours, Easy Eight doesn’t have a specific spirit focus when it comes to cocktails. Instead, the well-crafted drinks are aligned with food and have a fun and whimsical element with edible garnishes.
From the seven strong cocktail list, WOW 87 is a banana rum infused old fashioned with banana chips as garnish. Popcorn-infused bourbon with maple syrup make up the Pop Corn Old Fashioned and comes with popcorn praline while the Apple Pie combines vodka, apple with a pie crust on top – a drink and a dessert on one.
The food menu at Easy Eight brings American diner favourites such as the creamy lobster mac ‘n cheese, smoked brisket with pickled mustard and the hero dish, the smoked and roasted spring chicken.
Easy Eight Bar creates a bar hop triangle. Start at The Barber Shop with a Gin Martini, take the steps up to Easy Eight for dinner and cocktails and finish at the Baxter Inn with some of the finest whiskies. Bar hopping in Sydney’s CBD has never been so easy.
