Part of the Four Pillars Laboratory in Sydney, Eileen’s Bar in Surry Hill’s has opened in a space that combines aesthetics with the craft of the cocktails.
Eileen’s Bar is the centrepiece of the Four Pillars Sydney experience and features an imposing ‘juniper blue’ 20-stool, concrete bar at 11m in length. The bar, with a capacity of 60 persons (currently at 24-person capacity) is accessed via a discreet door on the corner of Fitzroy and Crown Streets.
The bar is designed by YSG Studio and combines aesthetic beauty, well-crafted cocktails and gin drinks (as well as other spirits) in an inviting setting. Banquette seating is arranged around the perimeter while the dark timber and cork finishes are designed to keep the focus on the bespoke bar set-up in stainless steel to comfortably accommodate four bartenders. At the rear of the space, in a moody alley dubbed ‘Tinder Lane’, with beautifully finished timber tables anchor cosy settings for two.
Eileen’s Bar Cocktail Menu
The cocktail menu has been designed by Creative Drinks Director, James Irvine and combines gin classics and modern interpretations showcasing the full suite of Four Pillars gins. From the modern cocktails, Money Trees is a balance of tropical fruit and acidity with Navy Strength Gin, Kakadu plum, kiwifruit, lime leaf and carbonated to order. Innerbloom features Australian native ingredients such as Davidson plum, macadamia and blood lime mixed with Modern Australian Gin. The Purple Yamos combines Bloody Shiraz Gin, ube whey, citrus and whites and is a take on the classic Ramos Gin Fizz.
Classics include the Gin Lab Martini feature the new Sydney Winter Gin (made on-site by the distilling team led by co-founder Stuart Gregor) with lemon myrtle, native sandalwood and orange oils, and, the Negroni puts the Spiced Negroni Gin centre stage.
Eileen’s Bar opens from 5pm to midnight, Wednesday through Saturday.
