Named after Henry Deane, the Australian engineer who electrified Sydney’s tramway system and designed the now historic Hotel Palisade, the rooftop bar spreads across two levels. Level 4 has its own bar and seating with cosy rooms and a balcony but Level 5 is the place to be. The interior offers modern luxury with pink-leather sofas, marble, copper fittings, large windows framing the sweeping 360 degree views, and a coveted balcony with breathtaking views over the Sydney Harbour Bridge.
A succinct and sophisticated cocktail offering by Venue Manager Matt Fitzgerald is by no means eclipsed by the view. Classics are turned into modern inventions employing clever techniques.
Henry Deane’s Negroni comes with a clarified orange sphere, adding another flavour dimension as the ice melts in the glass. In what looks like a glass of water and a celery stick is It’s Clearly Sangrita, a combination of tequila, tomato capsicum and fresh lime with Henry’s hot sauce. The pectin in the tomatoes has been broken down by a compound, spices were added then filtered through agar agar and the liquid is pre-batched with tequila. This is a drink that stimulates the mind and the palate. For elegant sipping, All Spice Daisy with sloe gin as a base brings a perfect balance of floral, fruit and spice notes in a tall, thin stemmed cocktail glass.
The food by chef Joel Bennetts befits the location with the likes of oysters natural, sashimi of kingfish and lamb tartare with horseradish and sourdough.
