Peg Leg, one of the most anticipated Sydney bar openings gives more than a nod to its history. The venue by bartenders Collin Perillo and Manuel Alavarez, (both ex Milk & Honey London) along with Paul Burton has been meticulously designed to celebrate Australian and British nautical history.
Located along Pyrmont Bridge Road, Peg Leg feels right at home in its surrounds with the Maritime Museum a short stroll away. The space was formerly a pub some 150 years ago and the new bar was built to the same shape as the original. The venue is split into two sections, there is a long bar area with stool seating and nautical paraphernalia and another split level with timber booths and ceiling bathed in subdued lighting, a cosy enclave that transports you inside ship’s hull.
The cocktail menu ($13 to $22) is divided into four chapters with five cocktails each: Officers for gin-based drinks, Crew with a rum focus, Buccaneers for other spirits such as vodka, tequila and whisky and Kindred Spirits for those who like their cocktails strong and spirited kind. Staying true to the Australiana with a nod to the British heritage, you’ll find The West Winds Gin, 666 Vodka, Mr Black Coffee Liqueur and Four Pillars Gin
When it comes to the cocktails by Alvarez and Perillo, you can expect nothing but precision and balance. From the Officers list, The Admiral has jasmine-tea infused gin from The West Winds Gin, Olorosso Sherry, lemon, a house-made beetroot shrub topped with soda. The drink is layered, starting a little sweet and sour from the beetroot shrub, leading on to a hint of tea and the gin that carried well in the soda. It’s light and sessionable while serious whisky lovers would enjoy, Zheng He from the Kindred Spirits lists, a stirred drink that balances Glenmorangie Whisky with Punt e Mes, Black Tea Cordial and Islay Tincture.
Aside from being a bar, Peg Leg operates as a café during the day with breakfast, cold pressed juices and coffee from Sensory lab. “We’re not just in the spirits business, we’re in the liquid business,” Collin Perillo explains.
If you’re hungry, Peg Leg serves a classic fish-based dinner menu and platters of seafood with oysters, prawns and frutti di mare.
