The Highball Bar is Sydney’s newest hidden bar set to change drinking culture by bringing tall, low ABV drinks to the heart of the city.
Located inside City Tattersalls Club in Sydney’s CBD, The Highball Bar is the latest venture from owner Flynn McLennan of The Long Goodbye and Kagura restaurant, an idea he has had in mind for a number of years inspired by his extensive sojourns to Japan.
The Highball Bar is a collaboration between Bibendum Bar and Strangelove mixers. The menu consists of low alcohol tall drinks served in a highball glass with a garnish and clear ice from Bare Bones Ice Company.
“The Highball Bar is the complete opposite of The Long Goodbye with its cocktails and house-made liqueurs,” Flynn Mclennan explains. “Highballs suit Australian drinking culture because it’s all about low ABV drinks, perfect for summer and an alternative to people who don’t want to drink beer and prefer something tall and refreshing.”
The drinks lists features 15 highballs made with a variety of spirits such as whisky, bourbon, gin, vodka, rum, mezcal, amaro, Escubac and Armagnac. A non-alcoholic highball using the new Seedlip Grove will soon follow.
Highballs range from the Black Bottle whisky with sparkling mineral water and lemon zest, to the Mezcal Highball with salted grapefruit mixer and the Amaro Highball with smoked cola and cherry. The Armagnac Highball is paired with Kew Triple Sec and Mandarin Soda.
For those who want something more spirit-forward, the bar also serves pre-batched classic cocktails from vintage decanters. These include a Negroni, Sazerac, Old Fashioned, Gimlet and the Shane Black with dark Amaro and chocolate. The pre-batched House Martini with extra dry house-made vermouth has a wide flavour spectrum, starting as a very wet Martini that tapers to a very dry finish.
The Highball Bar is currently operating as a pop-up inside City Tattersalls Club for a period of 2 to 3 months with plans to move to a permanent position.
