Hickson House Distilling Co. brings a new drinking experience in the heart of The Rocks, Sydney’s oldest suburb.
The team from the Barrelhouse Group which includes The Barber Shop and The Duke of Clarence have transformed a heritage warehouse in The Rocks into an expansive venue which includes a distillery, a bar and a restaurant. Co-Owners Mikey Enright and Julian Train are joined by Head Distiller Tim Stones, previously Manly Spirits Distiller and Global Brand Ambassador for Beefeater Gin where he was under the tutelage of Master Distiller, Desmond Payne,
Stills and barrels sit alongside an elegant lofty bar and dining space, overlooked by a more intimate mezzanine cocktail lounge, named the High & Dry Bar. The back bar is home to over 600 bottles from all around the globe, with a strong focus on Australian spirits, including rare whiskies, and the distillery’s own Hickson Rd. Gin which is distilled on site, and one of the first of many spirits to come including whisky and bespoke single spirits.
Hickson House is currently producing three gins distilled in 800L copper pot still custom-made by local craftsmen in Griffith, New South Wales. The gin range uses botanicals sourced from all over Australia with some grown exclusively for the distillery.
Hickson Rd. Australian Dry Gin (42% ABV) takes the traditional London Dry style with juniper, coriander seed, angelica root, orris root, liquorice root, orange peel and Oolong tea and adds, Australian native thyme, finger lime and aniseed myrtle. Hickson Rd. London Dry Gin (40% ABV) is a classic London Dry spirit with an Australian influence from Old Man Saltbush, a native Australian botanical which gives the gin a hint of salinity. Hickson Rd. Harbour Strength Gin (57% ABV) is the navy strength expression which also includes Old Man Saltbush.
Hickson House Distilling opens to the public on December 7th.
