Limoncello Martini with Olive Herb is the next drink in the ‘Summer of Limoncello Cocktails‘ series and makes a refreshing elegant sipper.
Not a true Martini, this recipe for the Limoncello Martini with Olive Herb is a take on another cocktail, the Lemon Drop Martini. The vodka-based drink makes use of an unusual botanical, the olive herb which adds a savoury note to the drink.
Olive herb (Santolina rosmarinifolia) looks more like rosemary and tastes of olives. We’ve previously used the herb in the Olivia Martini and for this recipe, the flavours of lemon and olives are very complementary. This is a drink to sip as the sun goes down or on a balmy evening.
Limoncello Martini with Olive Herb Recipe

Ingredients
- 45ml vodka
- 45ml limoncello
- 20ml lemon juice, freshly squeezed
- olive herb sprig
Glassware: Martini glass or coupette
Garnish: lemon peel and olive herb sprig
Method
In a cocktail shaker, add vodka, limoncello, freshly squeezed lemon juice and an olive herb sprig. Add ice and shake vigorously until well chilled. Strain into a Martini glass or a coupette and garnish with lemon peel and a fresh olive herb sprig.
