The Amaro Week cocktail series continues with Rabo de Galo, an amaro cocktail using Brazil’s national spirit.
This amaro cocktail takes us to Brazil via Italy for the Rabo de Galo, a very popular drink in Brazil made with cachaça. Rabo de Galo translates as “tail of the cock”, or cocktail. In this case, the vegetal notes of the cachaça play well with the vegetal-herbal notes of Cynar, the artichoke-based amaro.

Rabo de Galo Cocktail
Ingredients
- 60 ml cachaça
- 15 ml Cynar
- 15 ml sweet vermouth
- 2 dashes of orange bitters
Glassware: short glass
Garnish: lime peel
Method
In a mixing glass stir all ingredients with ice. Strain into a chilled short glass and garnish with lime peel.
