Perched above the Cauliflower Hotel is The Forgotten Cask, a rooftop rum bar that brings Caribbean vibes to Sydney’s inner suburb of Waterloo.
Take the stairs up to the Forgotten Cask and you’ll be transported to the Caribbean with a tropical fitout, palm trees, a grass roof and vintage rum posters that line up a wall. The holiday vibe spreads onto the rooftop terrace where you can sip on a Mahina Colada in a coconut under the stars.
Established by husband-and-wife team Justin and Pippi Drew, their vision for the Forgotten Cask was to attract neighbourhood guests who wanted a different experience to the pub downstairs. They turned the existing three bedroom apartment into a cool, laid-back rum bar where locals and guests can catch up with friends and sip on rum-based cocktails.
The Forgotten Cask rum bar is home to Chairman’s Reserve Rums, Clément Agricole Rhums as well as a handpicked selection of over 120 rums. The bar derives its name from The Forgotten Casks, a Chairman’s Reserve Rum expression that epitomises a showcase bar that offers a collection of boutique rums from around the world.
The cocktail list tempts with signature cocktails such as the long-time favourite Bonny and Read, made with Amaretto, Trader Vic’s macadamia rum, Takamaka Bay coconut, vanilla, egg white, lemon topped with crushed nuts and dehydrated coconut;, and Créole Reverse Margarita made with Créole Shrubb, blanco tequila and fresh lime juice. The classics are not forgotten with the likes of the Ti Punch, Caipirinha and an Espresso Martini made with Trader Vic’s coffee liqueur.
To further enhance the experience, The Forgotten Cask offers an enticing range of “Rum Voyages”. The rum flights take guests through curated selections of English, Spanish, French, Spiced and Premium rum flights.
The Forgotten Cask is open Thursdays to Sundays. Sip your way around the Caribbean and chill-out with DJ tunes on Friday nights and on Sundays with rotating DJ’s Feat DJ Linda Jennsen & Surf Dub Sound System.
