Don’t be misled that the white walls and pale timber Nordic fitout means that This Must Be The Place is a café. The Darlinghurst bar along the quieter end of Oxford Street serves some of the best cocktails in Sydney.
Bartenders Charlie Ainsbury (ex Eau de Vie Sydney) and Luke Ashton (ex Vasco) are both World Class Australia winners and if you’ve been at any of the bars where they’ve worked, you’ll know that TMBTP packs a lot of talent. The bar received a top 10 nomination in the 2015 Spirited Awards for Best New International Cocktail Bars.
This Must Be The Place brings a refreshing concept in cocktails to Sydney with a focus on easy to drink, low alcohol spritzers. If your idea of a spritzer is an Aperol Spritz, prepare yourself and your palate for a treat. There’s elegance, finesse and freshness in the drinks that you’ll soon be plotting your next bar visit. At TMBTP, preparation begins early in the afternoon with juicing fruit and vegetables, preparing shrubs, infusions and fruit oils in readiness for the 4pm opening. The drinks are carbonated in a bottle and if you manage to snare a stool at the bar, you can watch the spritzers being made.
The cocktails change with the seasons and you’ll occasionally find some native ingredients on the list such as lemon myrtle. Don’t leave without ordering the Belafonte. You’ll be hooked on this mix of Fino Sherry, Tanqueray No 10, lemon and wild basil topped with Prosecco. If classic cocktails are your choice, they make a mean Boulevardier.
This Must Be The Place is a casual and friendly bar that offers a relaxed style of imbibing. This is not a hidden or a speakeasy bar with dark timber tones and dim lighting. Go there on a date night, to catch up with friends and work your way through the spritzers.
