Karu Affinity Gin
From the Mouth of the Devils Wilderness in NSW comes Affinity Gin, a contemporary style of gin by Ally & Nick Ayres from Karu Distillery. At 44% ABV, Affinity Gin has floral aromas with a juniper-forward palate and subtle spice (think Christmas spice) along with semi-sweet citrus. Australian grown vanilla beans and almonds give the gin a naturally sweet and warming finish.
Affinity Gin pairs well with CAPI dry tonic garnished with grapefruit. The dry tonic highlights some of the fruitier pomegranate notes and the tartness of Rosella hibiscus. Karu recommend freezing the grapefruit and using it instead of ice which allows the gin and tonic to get juicier with each sip.
